Low-Cal Chicken Enchilada Recipe

(2) Authentic Lo-Cal Wheat Tortilla
(1 C) Kroger Brand Mild Thick and Chunky Salsa
(1) Kroger Brand Frozen Chicken Breast
(1 C) Kroger Brand Finely Shredded Mexican Cheese

Boil the frozen chicken on high for 1 hours, reduce heat to medium for another hour
Shred the chicken in a bowl using two forks
Add salsa to shredded chicken
Spray skillet with cooking spray
Lay one tortilla in the skillet
Layer tortilla with 1/2 shredded cheese
Layer with chicken/salsa mixture
Add another layer using the rest of the shredded cheese
Top with second tortilla
Spray top of second tortilla with cooking spray

Brown the tortilla on one side
Use a dinner plate to help flip the tortilla
Brown the other side

Use pizza cutter to cut into eighths

Approximately 110 calories per eighth!
