I have recipes posted for both Italian Meatballs and a Meatloaf. Made with 93% lean ground turkey but I promise you will not know the difference. Also both are VERY high in protein.0 -
I make ground turkey breast chili:
1 pound ground turkey breast
1 small onion
1 fresh tomato
1 can dark red kidney beans
1 packet chili powder (I buy the hot kind because I like spicy)
While meat is cooking:
Dice onions and tomatoes
Mix tomatos, kidney beans and a bit of chili powder, simmer
Sautee onions with a bit of olive oil and a dash of the chili powder
When the meat is cooked, mix everything and simmer another 15 minutes.
1/2 cup:
160 cal
15 carbs
2 fat
20 protein
Quick and easy with all fresh ingredients. I don't use any salt so everyone just adds their own. Great with fresh bread on a cold day.0 -
I make a low carb shepherds pie:

When I'm too lazy to cook anything elaborate I usually make a taco salad:
~1 lb of ground beef
~1 can of salt free diced tomatoes
~1 can of low sodium canned corn
~1 can of low sodium black beans
~1 packet low sodium taco seasoning
Brown the ground turkey first, add the taco seasoning according to the package instructions, then add the canned veggies and heat everything up together in a big skillet
It makes about seven 1 cup servings that are around 200 calories each (depending on %fat in the ground turkey). I usually throw a cup and a half in a bowl, top with a dollop of plain greek yogurt and some low fat cheese if I have the calories left! Then I have lunch for the next day too0 -
I do chilli too... but I use a spice packet because I suck in the kitchen.
1lb ground turkey or chicken
1 can corn kernels
1 can white kidney beans
1 can black beans
(any 2 different cans of beans of your choice... I've tried a few combinations)
chopped celery and onion
1 large can of diced tomatoes
Yum!0 -
Hawaiian Meatballs
Ingredients:
~1.5lbs ground beef
brown sugar
corn starch
vinegar
soy sauce
1 can pineapple tidbits
1/2 green pepper chopped
Mix ground beef with an egg and some bread crumbs (I also like miced onions in there too)
Brown in pan
While they are browning... mix together 2T cornstarch and 1/2c brown sugar
Also mix together the juice from 1 can pineapple tidbits, 1/3c vinegar and 1T soy sauce
When the meatballs are fully cooked, remove from pan. In the sam pan, mix the two bowls (wet and dry) together and pour into the pan. Add the pineapple and green pepper. Cook on high until it thickens. Add meatballs back and warm through.0
