Need ideas!

Okay, Hubby smoked a pork roast yesterday which he wants me to turn the left overs into a soup for tonight. Any ideas? Not sure how smoked pork would taste in a soup.

    Maybe find a chicken chili recipe and make it into a chili using the pork instead of chicken?? That'd be yummy!
  • Split Pea...I just did this about a week ago. Keep it more like a bean soup with plenty of broth. I used veggie stock and then lots of carrots, celery, and onions. it was great.

    I have a recipe for something called Portuguese green soup that uses smoked sausage and kale (or spinach). I think smoked pork might be a tasty substitute for the sausage. I don’t have the recipe book with me right now, but I’m sure you could Google it. It’s a pretty simple soup to make and very delicious.

    Okay, I took the idea of the Portuguese Green Soup and modified it to fit low carb and OH MY it was DELISH! I boiled a head of cauliflower in chicken broth then beat it up with a mixer. Then added a block of creamed cheese and the smoked pork and let it simmer. Meanwhile I sauteed onions and celery to add. Just before serving I added torn Kale. YUUUUUUMY!!! I have a winner!
