2 Points- Blueberry Muffins from Scratch!
I made these and brought them into the office for the ladies, they were a big hit.
Makes 24 muffins; Serving Size 1 muffin:
70 Calories, 2g protein, 13g carbohydrates, 6 Sugars, 2g fat (0 saturated), 10mg cholesterol, 3g fiber, 85mg sodium

1 1/2 cups unprocessed wheat bran
1 cup whole wheat flour
2 tbsps ground flaxseed
1 1/4 tsps baking soda
1 tsp ground cinnamon
1/8 tsp salt
3/4 cup fat-free milk
1/3 cup honey
1 ripe medium banana, mashed with fork (make sure it is RIPE- very important)
1 Large egg
2 tbsps olive oil
1 tsp pure vanilla extract
1 cup fresh blueberries or other berries (can add more if you want to for extra sweetness, just adjust for more calories)
Preheat oven to 400 degrees. Lightly coat 2 nonstick miniature muffin pans with cooking spray.
In a bowl, combine the bran, flour, flaxseed, baking soda, cinnamon & salt.
In a blender, combine the milk, honey, banana, egg, olive oil, & vanilla until smooth.
Make a well in the center of dry ingredients & pour in one third of the liquid mixture. Using a spoon, stir until smooth. Add remaining liquid mixture & stir until just combined. Add blueberries & stir again, but don't overmix.
Spoon 2 tbsps of batter into each prepared muffin cup.
Bake for 8-11 minutes. Keep an eye on them! If you don't end up with a full 24 muffins it means you may have over measured on some of the muffins. Just adjust the calories for your log. Enjoy!
