Protein Bran Muffins with Apples and Raisins
I just adapted and tweaked a couple of recipes and came up with these very tasty muffins that have 10 grams of protein and 170 calories per muffin. Depending upon your calorie goals, one or two of them and a piece of fruit would make a good breakfast to go.
Lynn’s Protein Raisin Bran Muffins
Preheat oven to 375 degrees F.
Spray 16 muffin cups with non-stick spray
Ingredients and procedure:
Mix together in a large bowl:
*Unsweetened soy milk—1 1/2 cups
*Large egg—1
*Light Agave Nectar—2 Tbs.
*Canola Oil—2 Tbs.
*Plain or Vanilla non-fat yogurt—1/2 cup
Add:
*Kellog’s All Bran (original, not flakes)—1 1/2 cups
*Chia seeds—4 Tbsp
Combine these dry ingredients gently with wet ingredients above and set aside
In a small bowl or glass measuring cup, pour one cup water over:
*Raisins—1/2 cup
Microwave one minute and then drain raisins
In a medium bowl combine:
*Whole wheat flour—1 cup
*Body Fortress Super Advanced Whey Isolate-Vanilla Crème—3 scoops
*Truvia Baking blend—4 Tbs.
*Baking Powder—1/2 teaspoon
*Baking Soda—1 teaspoon
*Cinnamon—1 teaspoon
Peel and finely chop:
*Large, crisp apple such as Stayman, Gala, or Honeycrisp—one apple
Add the dry ingredients to the wet mixture and combine gently. Fold in the drained raisins and chopped apples. Divide into 16 muffin cups that have been sprayed with non-stick spray. Bake 14-16 minutes or until a toothpick inserted in the center of the muffin comes out clean. Do not overbake.
When this recipe is made as directed and used to make 16 muffins, each muffin has 170 calories, 26 carbs, 4g fat, 10g protein, 141g sodium, and 5g fiber.
If a different brand or source of protein powder is used, the protein value will vary. If the chia seeds are not used, the protein will drop by .5g per muffin. The recipe was made using "regular" yogurt, but using Greek yougurt would increase the protein somewhat. Agave nectar is a natural sweetener with a low glycemic index. Honey or pure maple syrup could be substituted.
