Picky eaters!

It's so difficult eating right when you live with other people. My dad wants to lose weight and get healthy but the problem is my mom. She is worse than a child when it comes to doing things that are good for you. She doesn't eat well, smokes, and won't even consider taking any kind of vitamins. I want to cook good things for dinner for myself but also that she'll actually eat. We joke about it that she just doesn't like certain things because its good for her. She HATES tomatoes and turkey burgers or turkey bacon and we eat a lot of chicken. She also likes making the pasta roni things too. Any ideas of ways to incorporate some good foods and in ways that she will eat it?
