  • Recipe makes about 15 muffins.

    1 box of Chocolate chip muffin mix
    1 can of pumpkin (not pumpkin pie filling)
    a little cinnamon
    a little nutmeg

    Mix. Bake at 350 for about 22 minutes.

    BOOM. Fantastic, soft, yummy muffins that are perfect for fall!

    Ok, so first thing I did this morning was run to the grocery store to get all these things.........just got home and was entering all the ingredients into my recipes and it shows one serving as 143 calories........am I entering in something wrong??? I did the dry muffin mix "box" not bag and a can of pumpkin, a tsp of nutmeg,and a tsp of cinnamon and that's what it calculates for 15 servings..........

  • So no eggs, oil or water needs to be added ! and the calories per muffin is around 70 ? Just want to be sure that I understand ...

    I tried to find a muffin mix but all that I found were like 120 or 150 cal for a 1/4 cup of Dry mix. Can you tell me what brand you used? Or does it take less than 1/4c dry mix per muffin

    Used Betty Crocker Premium Choc Chip Muffin/Bread mix and canned pumpkin only = 172 calories per muffin - watch the mix you use - now sure which one gets you only 75 calories...........

    I tried it today...epic failure! Well the mix and the pumpkin puree was too dry so I added some water and then they were too mushy. I baked them for about 40 min to dry them out enough to be somewhat edible. Ha Ha Ha... I am still gonna eat them!
    Maybe it was due to me using a gluten free muffin mix. I read the Nutrition facts on my mix and turns out they would have been only 150 cal per each muffin if I had just added the egg and oil. The things we do for the love of food! Next time I will do some research on substituting to make it low cal. Turns out there is a ton of info on the net. :)

    I do something similar: 1 box yellow or vanilla cake mix, 1 cup of water, 1 cup canned pumpkin, 2 t pumpkin pie spice. Mix and pour into approx. 20 muffin cups. Makes moist, yummy, low-fat pumpkin spice cupcakes!

    I do oatmeal muffin mix with pumpkin pie filling but not the whole can. Certainly not 75 cals but very good and with a coffee a great filling low cal breakfast for days where I know I'm eating out later.

  • How did you figure it out at 75 calories?? I did a recipe adding everything up, and it comes up to 137 a muffin.

    I used Betty Crocker Chocolate Chip Premium Muffin and a can of Libby 100% pure pumpkin. Did you use something different??
