My Spaghetti Squash Pasta *with pics*

So after reading about spaghetti squash so much on the boards, I decided to give it a try! Not sure what I thought about it. It is definitely not spaghetti since it has a slight crunch but was still pretty good.
Ingredients:
1 spaghetti squash (I got mine at Trader Joes for $1)
Marinara Sauce (I used Prego Heart Smart)
Fresh Oregano
Zucchini
Mushrooms
Green Beans
Ground Turkey
Part Skim Mozzarella Cheese
Cut the spaghetti squash in half length wise. Remove all the seeds and fiber. Cook right side up on a cookie sheet in over for one hour at 350 degrees. Feel free to add some salt and pepper to taste. About 10 minutes before the squash is done, cook ground turkey in a small pot on the stove top at medium heat (be sure to break it up while it cooks). Once the turkey meat is cooked through, add zucchini, mushrooms, and green beans. Allow to cook together for a few minutes. Add marinara sauce to pot. Cover and reduce heat to a slight simmer. This will allow the veggies to soften, the sauce to warmup, and the flavors to mix. Once the squash is done, remove from oven and with a fork, start scraping the inside. It will shred apart like noodles. Place the "noodles" on a plate and top with the marinara mix. Top with fresh oregano and mozzarella cheese. (If you want to be creative, use the inside of the squash as a bowl instead of a plate
)

Serving Size: 2 cups pasta with 1/2 cup marinara mix

Ohhhh, I love spaghetti squash. I have been eating it in place of spaghetti for years. I do mine a bit different though. I cut it in half lengthwise, then sprinkle it with seasoning, then put the two halves face down on a pan and bake at 375 degrees or so for about an hour or longer. I just test it by pushing on the tops and when they are pretty soft I take them out. Then I carefully scoop out the seeds/pulpy stuff and then use a fork and scoop out all the meat/spaghetti strings. I like mine a little more done than crunchy but not complete mush. I top it with whatever sauce/combination I have for that night. Mmmm, I love it!0
