Easy Caribbean Fish Stew

to serve 4 people:

Ingredients: 4 fish fillets, sole, flounder, grouper, talapia or other mild light fish
also, 1 small butternut squash, 1 medium sweet potato, 1 large sweet onion, 16 oz coconut milk, pickled peppers, salt and pepper to taste, sprig fresh thyme


lightly season fish with salt and pepper

Steam butternut squash and sweet potato just until tender

Meanwhile:
in a large skillet Saute onion sliced into rings in 2 teaspoons coconut oil.

Season onions with 2 TBS juice from scotch bonnet, jalapeno or cherry peppers

Pour 16 ounces coconut milk over the onions. Bring to simmer and add squash and sweetpotato in a ring around the edge of the skillet
gently place fish pieces on top of onion in gently simmering coconut milk. top with sprig of fresh thyme and cover.

Poaching the fish in the coconut milk may not take any longer than 5 minutes, so watch closely.
