Weekend food without cookware?

Hi all, I'm a culinary arts major. Eating during the week is really easy; they really teach you about portion sizes and balancing a meal's nutritional values. It isn't like regular colleges or universities where its buffet style; the students prepare all the meals and they come plated already.
However, when the weekend hits and campus kitchens close, I get a little off track.
What are some things I can buy at the grocery store OR easily put together in my room to hold me over without being terribly bad for me? I have a fridge, a mini freezer, and a microwave to work with..
