I just tried it and it was delicious! I had it with marinara sauce and some cut up chunks of chicken and it was sooo good. Definitely will start eating it more. A huge portion with a generous amount of sauce was only 232 calories, including the chicken. Can't beat that.

I don't think of it as a pasta substitute exactly, but it does dress nicely. I made some with crumbled feta, lemon juice, oregano and a bit of olive oil and it was fantastic.
I first tried it in a restaurant prepared similarly to this and really enjoyed it! I like things I can eat a LOT of, so this has been great to work into my meals as a filler for few calories. I like it best as above or with tomato sauce and a little mozz and parm.0
