HELP: Quick, easy, and casual but healthy meal for company

For those times when you are having a friend over to just hang out, watch movies or whatever, I always think to just stick a frozen pizza in the oven. Anyone have other (healthier) suggestions?

I want something that's appropriate for company (no single serving frozen lean cuisine or anything) but also nothing too fancy or requiring a lot of handling/cooking. I'm having a pizza-kind-of-friend coming over and I can't picture serving chicken and vegetables :tongue: or something. I usually stay clear from the frozen/prepared food isles so I don't really know where to start. Or better yet, does anyone have easy, fun (healthy) recipes?

And all you have to cook is the chicken on the stovetop.

    lean chicken breasts. stuff with laughing cow cheese and a slice of boars head deli ham. Toss in the oven with asparagus/garlic/lemon.
    Top with 1/4c of pasta sauce.
    Quick, easy, a single pan. Done and done. Aside from that, you could add rice/pasta/shiritaki noodles if you wanted. I'll do that meal and add in steamed veggies (broccoli/carrot/cauliflower).

    My quick 'go to' meals are always tacos. You can make them as healthy/unhealthy as you want! Get whole wheat wraps for tortillas or skip them all together and just have a taco salad. Use low fat sour cream, salsa, low fat cheese or no cheese, turkey burger if you want to go leaner or just a lean ground beef, and the lettuce, tomato, onion or whatever else are all low in calories too!

    I stick to pizza a lot, so easy.... and I can still count the calories in the mixed dish (when it's bought)

    You could always buy frozen burritos, or make burritos.

    Set a bowl of refried beans, a plate with cheese....tomatoes...hot sauce.... whatever they want on their burrito. And they can make it themselves.

    Whole wheat tortillas, or white will work.

    You could have sandwiches and keep chips on the side if they want them. You could even have baked chips...I find it hard cooking for friends, they dont like healthy foods...=P

  • Buffalo chicken usually goes well with the "pizza-kind-of-friend." Just cook the chicken either on the stove-top or the oven, then shred or cube it (this can be done ahead of time too). Then just toss it in some buffalo sauce (which is low cal) and serve it either in tortillas, or better yet in lettuce wraps as per SoDamn's suggestion. Also, if you go with lettuce you can even top with a little bleu cheese or ranch and still be pretty light.

    Just make sure that if you prep the chicken in advance that you warm it up before serving. Cold buffalo chicken isn't nearly as appetizing as hot.

    1. Shimp – Tail on and sautéed with minced garlic (Tail on for easy eating)
    2. Raw veggies with hummus
    3. Loaded corn arepas (or polenta) only 80 cals each for a 5” diameter arepa. It can be loaded with black beans, a little low fat cheese, chicken or blackened tilapia, lettuce, tomato, etc.. endless possibilities. I use a recipe that is only about 200cals ea.
    4. Chicken breast chunks with Frank’s buffalo wing sauce. (or pulled chicken and the sauce and make wraps full of salad, veggies, and just a touch of blue cheese)

    OMG... i think i will use some of my own suggestions for tonight... Oh, no I'm doing orange shrimp and quinoa tonight. :-)

    Mmm, this sounds delicious. I also second making your own healthier pizza or tacos. Kabobs are good healthy option too.

    I do steaks and corn on the cob on the grill for company. Quick easy and they think you think they are special.

    Roasted chicken with potatoes and asparagus. It's super easy!

    Heat the oven to 375. Season the chicken. Put it in the oven. 20 minutes later, thinly slice some potatoes, cover in a little olive oil, salt, pepper and garlic powder and put on a cookie sheet in the oven with the chicken. 40 minutes after that, give the asparagus the same treatment as the potatoes and into the oven as well. 15 minutes after that, everything should be done.
  • You could make a fresh salad and mini calzones. Use whole wheat pizza dough (you can buy this premade), roll out and divide into equal circles or squares. Then you can put whatever ingredients you want in them. bbq chicken is great, light mozza cheese with turkey pepperonis, turkey and cheese, veggie ones. Just fold it over and seal the edges, then press with a fork. Bake at 450 for abut 15 minutes.
