Yummy mashed sweet potato recipe!

I served this simple and nutritious side with jerk chicken and sauteed veggies. Surprisingly, for the coconut milk, a little goes a long way and I actually only used 1/4 cup... I also used ground ginger, but just a tiny bit and I just eyeballed it. I'm sure it was less than a 1/2 tsp). So I guess I didn't follow the instructions, but I promise, it is delicious!
