I was always looking for more protein in my breakfast but unfortunately I can't stand the smell and taste of eggs.
Now that it's getting cold outside my favorite breakfast is a nice hot bowl of oatmeal.

This morning I tried a new recipe and it turned out great and gives me the warm oatmeal and the protein from the eggs without the eggy taste.

Makes 3 big servings:

1 1/2 cups rolled oats
3 cups milk
3 eggs
sweetener (I used sweet&low), cinnamon & vanilla to taste

Put the oats, sweetener and cinnamon in a saucepan, mix and add milk. Bring to a boil and let simmer till most liquid is absorbed. Stir often so the bottom does not burn.
Add vanilla.
Then add eggs, one at a time and mix well. The hot oatmeal will cook the eggs.
You will end up with a pudding-like oatmeal, really creamy.

Top with whatever you feel like, I added blueberries (thawed) this morning and it was really good.

Protein: 19
Fat: 10
Fiber: 4

    Sounds delicious! I didn't know you could incorporate eggs just like that. Sounds easy to make too.
