Caulflower un tater tots
Someone posted a recipe for Tater tots made with cauliflower. it sounded so o o good but I messed it up with a pretty good outcome. I steamed the cauliflower-ettes till just crisp tender no seasoning, cooled and added to the food processor to make chunky mash (like oatmeal). This yielded about 8 cups (75 calories each). Added salt, pepper, onion powder, garlic seasoning and stirred it in. I was supposed to add egg whites...but one yolk broke in the bowl so I just added 4 eggs. (290 Calories). I managed to get the 1/3 cup cheddar cheese (grate on fine - 100 calories) stirred in but... then I ran out of time to make the "tots". so I measured out 8 cups into serving pyrex dishes and baked at 375 degrees for 30 minutes. Wow! Met everyones approval. My son ate two! About 90 calories per serving.

gotta try this. I am always looking for a way to eat the cauliflower, I am not a huge fan of the cooked stuff but this looks good0
