Actually meat is meant to be weighed before cooking. It takes the guess work out of how much moisture evaporated off during the cooking process. Especially true for beef or pork. When you see a meat weight in the database, assuming you use the database instead of asking someone for the answer, it is generally for uncooked weight unless stated otherwise.
