Healthiest flour to cook with?

Making pancakes in the morning for the family, what's the best flour to use? TIA :happy:

    I've never tried it but I heard that buckwheat is pretty good.

    I use almond flour since I am grain free.

    buckwheat is a healthy choice, but I can't eat it. It tastes like dog food to me. I use white whole wheat flour usually. It's made from a blonder wheat plant and has a milder taste than red wheat. I haven't had any complaints. :) You could experiment with a bunch of types and combinations and come up with something really funky fresh. lol Rye, Buckwheat, Whole wheat, Brown rice flour, Almond meal, etc etc. Go crazy.

    If not gf, than wheat is ok. I am, I love oat. Brown rice is good, spelt and buckwheat are to popular ones. As is millet.

    I like oat the best though.

    I just made the banana pancake recipe that's always floating around here this morning. It uses no flour. Just one banana, one egg and 2 tablespoons of peanut butter. (Obviously increase the recipe for more than one person.)

    I was surprised by how freaking delicious it was! I added walnuts to the mix and topped with strawberries. Way better than any pancakes I've ever made myself. I think it would be good with dark chocolate chips added too...mmmm...

    Any flour is fine as long as you don't have issues with gluten. I like unbleached bread flour for pancakes. It makes them nice and fluffy.

    Chickpea flour is fantastic. I don't know that I would make pancakes with it but here is a savory waffle recipe

    I grind wheat flour whenever I need it. It is calorie dense but also nutrition dense if you grind as needed. After it sits 24 hours the nutritional content is down by 80%!
