Anyone have any good Cauliflower recipes?

I have a very large head of fresh Cauliflower any ideas as a dinner side?

    Break apart into florets, they don't need to be teeny tiny or anything. Spray/mist with olive oil, sprinkle with kosher salt and roast in the oven until a little browned on the edges, tossing around half way in between. I've done it at 400F and 350F, just depends on what else i have cooking in the oven. I like to do like half a head of cauliflower in a glass 9x13 pan so they aren't crammed on the pan and they get nice and toasty looking. Check every 10-15 mins. Usually takes half an hour to 45 mins. Hope it's not too vague. If you need more specific times and temps check out the web!

    Cauliflower Fritters. I just made these last night and they are delicious!

    Break into pieces and put in a big pot. Add 4-5 peeled and sliced potatoes. Pour 1 quart of chicken broth over it and bring it to a boil. cook 15 minutes. Drain off all but 1 cup of broth and save to make gravy. Mash with a potato masher. You now have a substitute for mashed potatoes that is lower in calories. I add 2 Tablespoons of butter and sometimes 4 oz of low (or no)fat cream cheese or plain yogurt. I have never met a child that would not eat these. Add 1 Tablespoon of corn starch to the reserved broth and cook until thickened.
    Any leftovers can be made into potato pancakes for the next day. Just add 1 egg and 3/4 cup Bisquick lite. Mix well and drop by spoonfuls onto a hot griddle or skillet that has been sprayed with butter flavored Pam. Serve with applesauce or lite sour cream.

    boil cauliflower in h2o w/3 bags of chamomile tea till soft, throw cauliflower in blender, put back in the liquid for a yummy soup.
