I live off of frozen Amy's meals

Ever since I tried my first Amy's organic meal, I was hooked. Most of them are 300-400 calories, and with a side of veggies, they are the perfect serving. They'd helped me so much in my bulimia recovery, and I'm not even remotely vegetarian!

1.) They aren't like lean cuisines or other frozen meal brands. You can read every single ingredient on the package with not a single chemical in sight. It made me feel better about eating them especially with the whole bull**** 'only clean' movement going around lately.
2.) They taste great and there's a pretty good variety to choose from. Better than anything I've ever cooked.
3.) They helped with meal timing. I pop one in the oven an hour before my time for lunch or dinner, and I don't have to worry about preparing anything else.

Once every two weeks, I stock up on them. Our entire freezer is filled with frozen veggies and Amy's meals. In the past 2 months, I've eaten 46 (I counted!!).

It was great while it lasted, but now I find myself getting just a bit tired of them. I know I'm using them as a crutch for facing other foods and learning how to prepare meals myself. For example, my mom made spaghetti the other night, and I had a spaghetti Amy's meal to pretend like I was eating with the rest of the family... A bit pathetic if you ask me.

I'm just ready to move on! I know I won't give them up entirely, because I do love them... But once or twice everyday is ridiculous! So here we go: I would like some suggestions on meals that I could prepare for myself and maybe a few well-instructioned and healthy recipes for one (or two). Any ideas where to start?

    Amy's meals are fabulous! Their soup is also amazing but if you're trying to move away from all of their meals, why not try to create your own meals that are similar. Make a veggie lasagna and freeze individual portions or make some rice and a stir fry, make a few meals out of it and freeze those too. Burritos are also really easy to make and freeze for a quick lunch or dinner. The nice thing with these meals is that you don't really have to follow a recipe - just throw tasty ingredients together and voila! If you prefer following recipes, there are so many online to choose from. Good luck and have fun!

    I've really been impressed with the recipes on the skinnytaste blog -- not too complicated, low calories, and my whole family says they taste good.

    I love the one that has the potatoes/cheese/tofu in it. soooooo good.

    the only problem is they can have a lot of sodium in them :/

    There are similar brands at my local whole foods and sprouts for different flavors...personally I love that I can have brown rice crust pizza from amy's :)

    I like Amy's meals. But honestly they're MEGA expensive compared to what you could be making yourself! Seriously.

    A box of whole wheat pasta - spaghetti, rotini, bowtie, whatever - at your local grocery shouldn't be more than $2. Buy an organic canned pasta sauce, parmesan, and a bag of frozen veggies. From there the preparation is pretty common sense lol. You can even prepare meals like those yourself, keep them in tupperwares in the freezer, and microwave them when you're ready to eat them. It really isn't hard once you get the hang of it. The only reason I'd ever rely on frozen meals was if I was in an environment where cooking my own food on a regular basis was inconvenient (like college, where I am now.)
