Fresh chicken breasts plus salsa in the crock pot makes a really good shredded chicken when done, or you can use it on pasta or just by itself.
Generally, cooking your meat from scratch (not prepackaged and such) will give you a much better quality food with very little sodium. Pre-frozen bags of chicken breasts are often frozen in broth which is a lot of added sodium. Try to buy fresh and freeze yourself.0 -

This is great idea, but if you use store bought salsa be sure to check the sodium content as most pre-made salsas are very high in sodium.
Fish or other meats are great low sodium protein choices. Just season them well with something other than salt. Try out no-salt seasoning blends such as Mrs. Dash. These add a lot of flavor without salt. Fresh or dried herbs are great too.0 -
I agree with the chicken breast in the crockpot. I use boneless skinless chicken thighs most of the time, because they are cheaper. Throw them in the crockpot with some diced tomatoes, onion, and lime juice and you'll have a really tasty shredded chicken to use in tacos or on salads.
I also put chicken in the crockpot with Italian seasoning and a little water, for a different version. Still shreds up nicely, but now it's great with spinach and a little cheese in a pita pocket or added to spaghetti.
I also like to buy a pork tenderloin and season it with rosemary, a little kosher salt and pepper and put it in the crockpot with a little water. Makes a great shredded pork. You can add bbq sauce for homemade pulled pork. Or just use it for sandwiches.0 -
I get no salt added cottage cheese that is really good. Recently I've been mixing it with fruit or even use it to make a type of pancake that is also delicious (with oats, egg whites, vanilla and pumpkin). The recipe forum has a ton of cottage cheese suggestions.0

These all sound really good...I'm just getting into crockpot cooking. When you say "a little water" how much are we talking? Just enough to cover the bottom of the crockpot, a cup or two, more?0 -

Personally, I use enough liquid to go about halfway up the meat. Hope that makes sense!0 -
I like pork tenderloin in the crockpot with Mrs Dash garlic and onion seasoning on it. Delish!0

I definitely need higher protein and lower sodium :ohwell:0 -
You can roast a whole chicken in the crock pot! 8 hours on low or until cooked through. Rest the chicken on a bed of onions or other vegetables, stuff the chicken with herbs, 1/2 onion, garlic, an apple or orange. Season the chicken with either an herb blend or just coarsely ground black pepper.
Once the chicken is done, transfer to the broiler for 10 minutes to crisp the skin. I used a foil "bowl" on top of a cookie sheet so the juices wouldn't escape.
You can make homemade chicken stock with the bones/skin/leftover meat in the crock pot as well! Now you have stock without the sodium for other soups..0
