Any healthy spring roll or other chinese food recipes?

I get a real craving for it sometimes. Chinese/Thia/Japanese foods seem like those foods that would actually be decently healthy if it was homemade. Anyone have some good, healthy recipes? I'm a lacto-ovo vegetarian, so bring on the eggs and veggies!

    I don't know about "chinese recipes" but i do know i often make stir frys out of virtually any veggies i have. using a none stick pan, and yes...a little olive oil or sometimes sesame oil. I love garlic in it, or ginger..don't need to add sauces but once in a while just a touch of teriyaki. only thing i recomend it to start cooking the dense veggies first. Carrots, broccoli, cauliflower. Last should be snap peas, mushrooms, bok choy or other cabbage.

    Oh yah, i haven't tried it yet but im going to make homemade "deluxe wonton soup" making my own wontons with a veg./pork mixture. i love that soup, but really high in salt/msg when in a restaurant.

    I'm no help with Chinese food, but if you like Thai food here is a pad thai recipe I've made a few times and it was pretty yummy.

    Another good light Thai dish is gang panang - if you use light coconut milk and brown rice it is tasty, filling, and healthy. We make it often and just throw in whatever veggies we have hanging around so it is a good 'fridge cleaner' recipe. You can use lime zest instead of lime kafir.
