Healthy alternative recipes for rice

I am looking for a healthy recipe for an alternative for white rice. We do not care for brown rice so we are looking to see if anybody has a good tasting, healty rice recipe. Thanks everybody.

    Try using Quinoa instead of white rice.

    If you don't like brown rice you probably won't like the taste of quinoa. It has a very distinctive flavor so buy a small amount to try it. Brown rice really isn't much better for you than white so if you enjoy white rice just eat it.

    You can "rice" cauliflower with a food processor, makes a nice alternative.

    Quinoa is a great alternative to white rice and can even be substituted in many recipes for it.

    My Fiance has made traditional Puerto Rican recipes with quinoa instead of white rice and it's come out great...friends and family have all enjoyed the reworked recipes. You really can't do that with brown rice.

    FAUX RICE
    20 ounces fresh cauliflower, 1 medium
    Butter
    Salt and pepper

    Trim the leaves and most of the tough stalks of the cauliflower, then coarsely chop into manageable pieces that will fit the feed tube of your food processor. Using the grating disk, process the cauliflower; put in a 2 1/2 quart casserole with a lid. Add 2-4 tablespoons of water, cover and microwave on HIGH 8-14 minutes. Stir every 4-5 minutes and check for doneness. When tender, but not mushy, add some butter; season with salt and pepper to taste.

    Makes 6-10 servings
    Freezing not recommended

    What are you making? There are tons of grains, barley and wheat berries for example, but it entirely depends on what you are serving.
