Homemade Potato Soup...

I thought I would share my potato soup I made today...I thought it was pretty good and only my first attempt and only 114 calories for a bowl!

2 small red potatos (165 g) 106 calories
1/4 cup Silk unsweetened almond milk - 8 calories
salt and pepper to taste

I washed and cut the bad spots off the potatos. Cut into medium sized cubes. Put in small sauce pan. Add just enough water to NOT cover potatos (i.e. the top of my potatos were still sticking out). Boil/simmer covered on low heat until potatos are soft...I boiled about 20 mins. By this time, most of the water will be evaporated or absorbed by the potatos. Use a potato smasher to break potatos into small cubes. Add the almond milk, and continue to heat over very low heat for another 5 mins or so until the milk has thickened just a bit and it is more soupy than watery. Salt and pepper to taste. You could add some cheese or bacon to dress it, but I had neither so I just ate it plain!
