I don't really eat much as I'm a fussy eater but I'm wanting to try a stir fry so this is what I plan to put into it:

-Egg Noodle (Obvious)
-Red pepper
-Spring onions
-Carrot
-Soy Sauce

Is that too boring? Is there anything else any one would recommend I should put into it?

Are you a vegetarian? If not you need some protein like chicken. I put snow peas or sugar snap peas in mine and mushrooms.

Bit boring - add ginger, garlic, chilli or a squeeze of lime, all to taste. Also, try beansprouts.

I'd add some acid for brighter flavor... lemon or lime juice.

Some sort of protein is a must in a stir fry. I like shrimp & fresh grated ginger because it cooks fast and is low in fat. I would probably stay away from the egg noodles but you indicate they are a must for you. I would prefer a stirfry over some steamed brown rice or quinoa or whatever grain you prefer as opposed to a "pasta"...but that's just me.
