Raw Recipe #4 - Discovered Valley Ranch Dressing
When I started a raw diet, I was not sure how I was going to eat a lot of salad without a creamy dressing. I discovered I don't have to!
I will only post recipes I've actually tried and liked and will give credit where it is due. This salad dressing/dip recipe comes from www.nouveauraw.com. It was a lot like Hidden Valley Ranch and is SO much better for you!
Discovered Valley Ranch Dressing [or dip, if you omit 1 cup water]
Ingredients: yields 3 cups
•1 cup raw cashews, soaked for 2 hours and drained
•1 cup water
•¼ cup fresh lemon juice
•¼ cup raw apple cider vinegar
•2 Medjool dates soaked in 1/2 cup of water
•1/2 cup date soak water (use the soak water from above)
•1-2 large cloves garlic or 1 tsp garlic powder
•2 Tbsp red onion, minced
•3 tsp onion powder
•1 tsp dried dill or 1 Tbsp fresh dill
•1 tsp sea salt (increase to desired flavor)
•1 tsp dried basil or 1 Tbsp fresh basil
•Black pepper to taste
Preparation:
1.Place all ingredients in your blender and puree until smooth and creamy. If using fresh herbs add those last.
2.If using as a dip, omit the cup of water and place the dressing / dip in an airtight container and chill for about 2 hours to thicken. This should be good for 5-7 days.
Nutritional Value: 3 cups = 48 Tbsp = Info calculated for 1 Tbsp

•Carbs: 2.5 gm
