"Party" food suggestions?
My friends and I have started getting together every week and we're going to start bringing food with us to our little gatherings.
I just want some easy party food ideas that are HEALTHY but that are also delicious. It's safe to say I'm the only one who gives a flying f*** what goes into my mouth so I want to bring stuff that I can eat (mainly so I'll have at least one option when I'm there) but that my friends will also want to eat. Veggie trays and such are all but out of the question. Last week I brought a cut up canteloupe and while it was consumed by a few people, suffice it to say I was left eating canteloupe as a morning snack all week.
Food that is good served cold or room temp is preferable since we don't normally meet at my house.
I'm thinking I may be able to get away with hummus and carrot sticks if I bring pretzel rods, too, this week. But I can never have too many ideas and suggestions.
Thanks!

I was going to suggest hummus. Bring some some chips and veggies so they have a choice. There are some great tasting tortilla chips that are whole grain and minimal ingredients...one brand it Food Should Taste Good(they are awesome!). If you have a Trader Joe's by you, they have some good choices too. You could also make any dip you would make with sour cream, but substitute with fat free greek yogurt.0

Salsa. Most are only 5 calories per tablespoon.0

Cook some apples, then add a minimal amount of cinnamon and sugar - great served cold or hot (microwave to heat up).0

Soda Pop Cup Cakes are pretty darn calorie-cheap, and they're fairly tasty. There's lots of variations, but the gist of it is...a box of cake mix and a can of diet soda. Low on sugar, lower on fat than if you made the mix according to the box. I've even used a mini-cupcake pan for these...you end up with a whole mess of bite-sized cupcakes.

They're like...120 calories for a normal-sized one, 60 for a mini...and who doesn't love cupcakes!0 -
How about a layered Mexican dip?
Food process or smash canned beans or fat free refried beans, spread fat free sour cream on that, then spread on a layer of salsa, top with chopped veggies~ green onions, olives, green peppers, tomatoes, lettuce & jalapenos if wanted. Sprinkle just a small amount of lowfat shredded cheese on top. Serve with baked Tortilla chips or jicama slices.0 -
I made this spinach artichoke baked dip a few weeks ago... and it was quite good! Serve with some pita chips and/or carrot chips or whatever else you can think of.
I'm not 100% sure of the nutritional info, but looking at the ingredients it's at least a "better option" than say french onion dip. :blushing:

Low Fat Chicken Quesadillas, with salsa & fat free sour cream to dip them in!!!
~4 oz boneless skinless chicken breast, grilled, & chopped into tiny cubes
~La Banderita Fat Free tortillas
~2 cups Kraft shredded fat free cheddar cheese
~ sauteed onions, chopped red & green bell peppers, & sliced baby portabella mushrooms
~fat free sour cream
~salsa
Assemble quesadillas by taking one tortilla, top with cheese, veggies, chicken, another layer of cheese, & then place another tortilla to finish. Press the quesadilla on a George Forman grill or use a saute pan to melt cheese & brown tortillas on each side!
Cut quesadillas into small triangles, and provide a cup of salsa & a cup of fat free sour cream for dipping! Your guests won't know that it was a figure-friendly recipe!!! I've done this twice and everyone can't believe I would bring such an appetizer!0 -

2 tomatoes, diced small
1 onion, diced small,
1 jar of capers,
TONS of Italian Seasoning
Olive oil about 3 tbsp...

I was hoping for some party food ideas too. I have bible study once a week and Super Bowl party coming up, so glad to find some healthy snacks that the whole crowd will love. Whoever posted Hungry Girl link, they had some AWESOME twists on classic party foods...tater skins and jalapeno poppers YUM!
Just to add to the list, the last two weeks of bible study I took a cocktail shrimp ring and homemade mini-quiche
Mini-quiche:
1 refrigerated 9" pie crust
4 whole eggs (or prob about 8 egg whites)
4 slices of turkey bacon (cooked, crumbled) or 1/2 c spinach drained
1/2 c swiss cheese
Preheat oven to 375. Spray a mini-muffin pan with cooking spray. Cut small circles using a cookie cutter (or I used an old icing container from cinnamon rolls, perfect size) from the pie crust. Push circles into mini muffin tin. Beat eggs, then stir in bacon/spinach, and cheese. Use salt and pepper if desired. Bake 15-20 min. or until eggs are fluffy and lightly browned on top. Turn out onto plate to cool. Can be served warmed in microwave or room temp.
Hope to get more ideas.0 -
