Banana-Coconut Protein Pancakes

"Now the mornings are getting a bit colder you might be wanting a breakfast to warm you up... look no further than these delicious pancakes that also fit in with our fat loss guidelines.
Recipe;
1) In a bowl combine 2tbsp desiccated coconut, 2 whole eggs, 1 scoop vanilla protein powder (20-30g depending on brand), 1 banana broken into chunks, a dash of cinnamon and a dash of vanilla extract.
2) Blend all of these together with a hand blender.
3) Pour 1/8 of a cup of the mix into a non stick frying pan on a medium heat and cook until the top side starts to bubble and then flip and cook for a further 30secs.
4) Repeat until all the mix has gone; this should yield 6-8 pancakes
The combination of fibre from the coconut and banana along with the high protein content of the eggs and protein powder help to keep you full and put your body in an ideal state to be using body fat as fuel.
For those of you short on time in the mornings these can be made in a large batch the night before and eaten cold or warmed up in the toaster.

Per Serving:
Cals 64
Carbs 40
Fat: 3
Sat Fat: 2
Protein: 5
Fibre: 1
The uncooked mixture looks a bit icky, but they're damned good!

Also curious. 40 grams is IHOP territory, not home protein recipes.0 -

Double checked.......somehow the banana was showing as 272g carbs!!! Have amended recipe..........should read as 5g carbs. Sorry!!!!!

Had these for breakfast this morn. I used coconut powder instead of the shredded coconut. Mine made 3 pancakes and I was not sharing. This is the best flourless/ protein pancake reciepe I had tried on here by far.0
