Edamame!

I discovered that I love edamame! I just had 1/2 cup of the beans -- 110 calories, 12 carbs, and 10 grams of protein. I buy the ones in the pod because it's fun to squeeze them out of their shells ( 1-1/8 cup will get you 1/2 cup of beans.) It takes a little effort and time so that I don't eat the entire portion in 2 minutes. I was looking for ways to get some more lean protein into my diet and I'm so glad I found these! What's the catch?? :huh:

    Personally, I'm not a big fan of soybeans.

    [Here is where you would normally expect to find a few cites supporting my position on soybeans...but I'm just not that interested in the ensuing debate so I'll sit on the sidelines and hope others will pick up my slack. (It's like I'm willfully choosing to be in the 47% for this discussion.)]

    I just finished eating 3/4 of a cup. I buy mine removed from the pod and frozen. It takes about 10 minutes to make them. Add an optional splash of olive oil and some salt and you have a high protein vegie.
