Any good venison recipes?

Soo! We now have a freezer full of deer! Yay hunting season. I'm not quite sure what to do with all the meat though....so does anybody have some good recipes? Right now most of it is in chunks. Some is stew meat pieces and he plans to grind some up later for sausage.

We eat mainly wild game. I use it just like you would beef.0

We usually have most of the venison and elk ground up. Then use just like hamburger, but you may need to add some fat, or use half-and-half with beef. Of course, keep out a few choice steaks and the backstrap!! I am sure you'll get lots of more creative ideas, and I'll be watching, too!0

We grind 90% of ours, so I typically make chili, tacos, sloppy joes and the like.0

I usually take the backstrap and cut it into strips about 3/4' -1" thick season them lightly with a little salt, pepper, garlic powder and then wrap a piece of bacon around it....toss them on the grill for about 10-15 minutes...0

I'll also marinate either the backstrap or hamsteaks in soy sauce, liquid smoke, worcestershire sauce, chili powder, garlic powder, paprika, cayenne pepper, black pepper, salt, and onion powder over night and then cut the meat into 1/4' thick strips and put it in a food dehydrator to make venison jerky.0

So far I'm playing around with marinades and which spices taste best and stuff like that.
For the most part I am using it like beef, just changing up spices and marinating it more often than I usual do with beef.0 -

Do NOT put it in hamburger helper. I learned the hard way that it's not quite interchangeable with ground beef in everything.
And my favorite way to eat it is breaded and fried, so I'll be looking for new ways to cook it as well. We've got 2 coming back from the butcher any day now.0 -
Throw it in a crock pot on low overnight with carrots, onion, potatos and celery. Cover, and in the morning it will smell heavenly. One of my favorite meals by far!!!0

BUMP, because YAY DEER SEASON!
We process a "chunkier" cut to use for chili, and some of the ground gets cut with smoked bacon, which makes THE BEST MEATLOAF OMG.
I'd like to know what people do with backstrap besides chicken frying it, because that's the only way I've found that I like it.
Maybe I'll have to try a braise with red wine and mushrooms, bourgignon-style. Hmm.
ETA - Oh, and this year I think I have my dad and uncle talked into making me some Italian sausage. MMMM.0 -
I have some deer cubes mixed in with snapping turtle meat right now, making a real good stew. Carrots, potatoes, onions, and some garlic..Plus if I have it figured right 2 cups should be less then 300 calories.
