Soup. Had to share this recipe from BBC good food app, I made it yesterday and can promise its delicious.
Serves 4-5 184 calories per serving.
1kg butternut squash peeled and deseeded chopped into 1inch pieces
1onion diced
1 garlic clove finely sliced
2-3 fresh mild chillies finely sliced or chilli flakes
4 tablespoons olive oil
2-3 tablespoons low fat creme fraiche
850mls hot vegetable stock
Put the squash in a roasting pan and mix in half of the olive oil, roast at 180*C for 30 minutes until golden.
Put the onions, garlic and chilli in a pan with the rest of the olive oil cover with a lid and cook until the onion is soft.
Add the squash, stock and creme fraiche to the pan and blend with a hand blender or in a liquidiser. Heat through thoroughly and enjoy.
