How long before stomach (the organ) shrinks?

I have started (again) a lifestyle change where I eat reasonable portions and make healthy food choices. Before I started working on myself, I was eating a lot more food (and a lot heavier food, as well). I ate when food was appealing until i was so fully that it wasn't anymore.
Right now, i am struggling with knowing the right amount to eat. i am working on only eating when i am hungry and stopping when i am no longer hungry, eating plenty of plants and protein, and tracking carefully, but I always assumed i would just have to be hungry a little bit to lose weight (you have to run a deficit, after all).
People have been telling me that after watching my portions and my intake, my "stomach will shrink" and I will be satisfied by a smaller portion of food. Can someone confirm this?
BTW, I am already familiar with other strategies for reducing hunger (exericse, water, protein/fat, fiber, coffee, enough rest, avoiding carbs/sugars, etc.) I am just curious if, separate from tweaking what we eat, there is any truth to the idea that my body will ever be happy with smaller amounts of food, since i've stretched it out so much with crap for years How long will it take? will anything help speed this process of shrinking my stomach (eating small meals frequently, soups, etc.)?

Your stomach does not shrink but your hunger signals are regulated by the hormones ghrelin and leptin and should eventually allow you to feel full on less food. Make sure you get plenty of protein and fats as these are satiating as well as veggies for volume.

It isn't so much the physical size of your stomach but the hormonal signaling that will change over time. Along with the protein and fats recommendation and the importance of non- convenience veggies for volume consider:
1) drinking more liquids to assist in feeling full.
2) counting calories to assure that your cut isn't too large. Too large a calorie cut can lead to hunger>binge> restrict cycle that is emotionally draining and likelier to lead to failure.0
