Tried something new today! I had tilapia which I marinated in 1 tbs of Asian seafood sauce for about an hour. Then I cut up butternut squash, carrots, and red peppers put some Pam in a frying pan and put in the squash and carrots for about 5 minutes then added the red peppers for about 3 minutes then added 2 tbs Asian seafood sauce and cooked another 4 minutes I then made room for my tilapia in the same pan and cooked that about 12-15 minutes with the veggies. I had prepared some enriched long grain rice so after I removed just the fish from my pan I added the rice mixed it around for a couple minutes with the veggies then dumped it all on my plate. I had a side salad of green leaf lettuce and cucumbers with sugar free balsamic vinaigrette dressing.
The sweetness of the vinaigrette offset the spice of the seafood sauce very nicely! And it was quite a decent amount of food: 4 oz of tilapia, 1/2 c of rice, 1/3 c of carrots and red peppers, 1/4 c of squash( wish I had added more of it), 3/4 cup of lettuce and 1/2 c of cucumbers.
