Pumpkin Pudding Recipe-Delish!

1 can evaporated skim milk
1 (15 oz) can pumpkin
1 tsp pumpkin pie spice
2 packages sugar free, fat free vanilla pudding

Stir entire can of evaporated skim milk into a bowl with 2 packages of sugar free, fat free vanilla pudding. Stir well and then put in the fridge for a few minutes. Pull pudding out of fridge and add the entire can of pumpkin plus the pumpkin pie spice. Mix well. (It won't look appetizing at first, but it makes a very yummy pumpkin pudding that is very much like the filling in a pumpkin pie. Almost tastes like pumpkin cheese cake.) You could easily crush some graham crackers and sprinkle on top or serve with some Cool Whip Free. On it's own, the recipe calculator said 103 calories at 8 servings. I think it is a very good alternative to pumpkin pie and very tasty! Enjoy!

    sound very delish :) If you use the fat free evaporated skim milk it would less calories, but I wonder if it would change the integrity of the pudding? I may try it using the fat free.

    For my pumpkin pudding. I use can pumpkin pie mix and mix with equal part to vanilla pudding. Its so good
