GL Diet/Fasting

Hi All,
I've just started eating the Patrick Holford way (GL Diet Bible) and trying to also fast for 2 days (eating 500 cals). I'm not sure I can do two consecutive fasting days so I'm doing it tomorrow and Thursday.
I have to admit, I'm finding the science behind it and how to work out the GL a little difficult to grasp so I thought I would ask if anyone could give me the low down (in dummy format :-)) - I have noticed that there is a GL Diet For Dummies book but trying to avoid buying that and have it sit on my shelf :-)
If anyone else is combining fasting and GL dieting and have any tips for a newbie they would all be welcome. It would also be good to share the journey with people on the same road so please feel free to add me.
