High Protein, Healthy Fat Fajita Salad w/ PHOTO - 13 WW Pts

If you are like me, you are always trying to get more protein and always find yourself too low on fat- if I get 10% a day it’s a decent day despite drying to obtain 20%. I put this Fajita Salad Bowl together tonight – my first attempt, and hubby and I absolutely loved it! The only downside is I forgot to put the tomatoes on before we dove in ;) Don’t let the photo fool you, this bowl was absolutely huge so if you want to cut down on meat and add more lettuce, go for it!

Heather’s High Protein, Healthy Fat Fajita Salad

6 tbsp salsa (I used Daniel’s Fire Roast)
12 romaine heart leaves, shredded
60g avocado (½ of a small avocado)
½ packet Fajita Seasoning Mix (I used Great Value)
1 medium green pepper, diced
2 Flat Out Multi-Grain with flax tortillas
¼ cup black beans, drained and rinsed (I used Great Value Black Turtle Beans)
½ cup onion, diced
1 roma tomato, chopped
20g medium cheddar cheese shredded
300g extra lean ground turkey (I used Maple Leaf Prime)

Directions: form 2 baseball-sized balls with tin foil and fold each tortilla over a ball and place on a cookie sheet. Spray lightly with Pam and bake at 400 degrees for approximately 10 minutes to create the edible fajita bowl. Combine onions, green pepper, fajita mix and ground turkey in a pan and sauté until meat is fully cooked and vegetables are tender. Shred lettuce and place in tortilla bowls, top each bowl with 2 tbsp salsa, meat/vegetable mixture, tomatoes, black beans, final tbsp of salsa and 10g each of shredded cheese. Finish by placing sliced avocado along the sides of the bowl. Dig in!

* Serves 2.

Nutrition: 599 cals, 1,540 mg sodium, 24g fat, 54g carbs, 47g protein, 17g fiber each.

Weight Watchers Points: 13 pts or 15 pts+
