Chicken and Vegetable Soup
This is my own recipe. It's delicious!!
Ingredients:
3 medium boneless/skinless chicken breasts
1/2 onion, chopped
1 15oz. can tomato sauce
2 15oz. cans diced tomatoes
2 15 oz. cans Veg-all, drained
salt and pepper as desired
Directions: Boil the chicken in a large pot until done. Remove the chicken and shred. Return chicken to the pot. Make sure you have plenty of broth remaining in the pot. Add water to desired amount. Add the remaining ingredients. Bring to a boil. Reduce heat and simmer for at least 30 minutes, longer if desired.
There are 1400 calories in the entire pot. I divided mine into 6 servings at 238 calories per serving. Served with some crackers and some fruit, this makes a very filling meal!
