new ideas for chicken

i always grill up a big batch of chicken breasts and keep them handy for meals, snacks. i am always trying to come up with some yummy quick recipes. i made a great one for lunch today, i cut up a 4oz chicken breast (120 cals) into small chunks, softened some onion in a pan with nonstick spray, added few dashes hot sauce, 1 tbsp bbq sauce (35cals), 1/2 oz low fat shredded mozzarella (35 cals), mixed all together and put it on josephs pita (60 cals) and in the toaster oven for 4 mins. cut in 4 pieces like a pizza. ooey, gooey and very tasty. total of 250 cals, very filling for lunch.

any other ideas??

    I like to put shredded chicken in cous cous! It's a small maraccon pasta. Add some toamtoes, cucumbers and pine nuts, YUM! Or chicken tacos!! Even a light chicken salad, I actually really like my chicken salad with minimal mayo, some mustard, onions, celery and grapes on top of shredded iceburg!

    chicken salad is a good idea that i forget about and i love grapes in it too. sometimes i use raisins as well. i have some ezekial raisin bread that would be good with chicken salad, thanks for the post.

    I take baked or rotiessere chicken and shred, add to pan with a little pam, add tsp of spaghetti sauce and then also all kinds of veggies, shop up semi fine and add a tsp of parm cheese. Its really good and hearty.
