Bread causing large weight fluctuations

Hi,
Wondering if anyone else has this happen. I'm finding that if I eat sliced bread, even sticking to my calorie count, my weight fluctuates dramatically. No exaggeration, I have found sometimes that the morning after I eat sliced bread, I've gained 2 kgs on the day before. I understand that weight fluctuates daiily, but 4-5 pounds (sometimes more) heavier in 12 hours, that can't be right, surely?
Anyone else find this?

I seem to bloat when I eat bread which is a pain but I limit to how much I eat... Not sure why the weight difference would be that much?0
