Calling all vegans! What do you make for Christmas dinner?? Need ideas to make this year for my meat loving family.

For starters, either soup or salad then for the main I usually enjoy the tofurkey roast (which comes with stuffing), roasted potatoes, roast sweet potatoes, brussel sprouts, carrots and vegan gravy....and if there's room some dessert (this year i'm making the carrot cake from the peas and thank you cookbook.)0

Tofurkey
Butternut squash salad (with orange juice and nuts)
Potato Casserole (hashbrowns, crushed potato chips for the topping, Daiya cheddar, vegan cream of mushroom, vegan butter)
Baked Sweet Potato (chop up sweet potato and bake for 30-35 minutes after rolling in coconut oil, sweetener, and cinnamon)
Some pasta dish (marinara, lemon and basil and olive oil and garlic, pasta salad)
Green Bean Casserole

I'll prob do some baked sweet potatoes, a veggie stir-fry & fruit cobbler to take to my Mum's. Everyone there makes fun of my whole foods plant-based lifestyle, but yet they all eat what I make & love it! lol!.
Best for veggie stir fry: slice zucchini & squash lengthwise into thin strips, slice yellow wax & green beans length wise, lightly stir fry w/grapeseed oil (if want, add a little garlic powder, basil & chipotle to add heat), add sprouts at end & lightly mix.
For potatoes, cut almost to the bottom widthwise so it accordions out, roll in a little grapeseed oil & bake until desired crispness
Fruit cobbler: cut up apples & pears, mix with lemon juice. Put in pan (I add a little grapeseed oil to avoid it sticking), if want, add raisins, raspberries & blueberries (can add these last 2 towards the end so they don't get too mushy!), sprinkle cinnamon & bake. If want a crumble topping - mix about 2-3 Tbs vegan butter, softened (may need more or less), 1 tsp xantham gum, about 3/4 to 1 cup rice flour (or flour of choice), about 1/4 cup cane sugar: mix together with a fork so it gets a more crumbly texture. Sprinkle over fruit & bake until browned.0
