Banana Bread

I had a few leftover bananas from last week that we're a bit too ripe for my liking. This seems to happen often so I make Banana Bread with them.

Last night while trying to find a way to cut out the 3/4 of sugar that the recipe calls for, I came across a small box of Sugar Free Vanilla Pudding Mix. What the heck - the only thing I had to lose was a few old bananas.

I was pleasantly surprised! I didn't use any white sugar and instead added 1/2 a package of the Vanilla Pudding Mix - bake as directed... yummy! Our 4 year old even gobbled some down for dessert last night with a few frozen blueberries.

Not sure what the nutritional information is but between my sugar substitute and the whole wheat flour - it can't be too bad... :tongue:
