How do you fix your turkey?

This year I'm alone so no big dinner but I did get me a 15lb turkey (yay! meat for days). You cant beat 88 cents a pound for meat.

How do you fix your turkey?

This year I'm going do an apple sage grape dressing in the bird and garlic butter rub with cayenne on the skin.

I will also do a small cornbread dressing and gravy, green bean casserole, corn and some type of dessert.

What are you doing?

  • I am torn between brining (makes super moist turkey) or regular roasting with a honey, mustard glaze. Both ways would include stuffing.

I take the turkey and make slits in the breasts and legs/thighs put chopped garlic in the slits, rub the bird down with seasonings, I dont stuff it but cut up an onion and some garlic and put it in the bird as weel as season the cavity. I put a stick of butter, little wine, mojo and a little lemon juice in a roasting bag put bird in there seal and cook Its so moist did a 25 lb bird and the breast was juicy all the way to the bone.

Stuff it with a bacon/butter/onion/garlic/fresh herb stuffing. Glaze and baste it with a combination of honey seeded mustard, a sweet white wine and orange marmalade.

Although I will have to wait a little longer for my turkey - in Australia we have our turkey on Christmas day. :)
