Healthy Thanksgiving dishes

Hi all. I have been asked to bring a vegetable dish and a dessert for Thanksgiving. Of course, the yummiest stuff is usually the worst for you.

Any suggestions for a healthy, yet tasty to those not watching their diet, dish?

I have two huge meals that day and would really like to stay somewhat on track :)

    I was thinking of making red cabbage with apple's and cinnamon as a vegetable dish for our Christmas dinner. We don't celebrate Thanksgiving around here :-)

    A lot of people swear by taking a boxed cake, adding a can of pumpkin to it and baking into cookies or cakes. I havent tried it but tons of people swear by it.
    My favorite cookie recipe is the Moms Best Quaker Cookies Recipe. Replace half of the butter and sugar with applesauce. A ton lower in calories and just as good. For myself I cut the sugar to 1/4 and cut out all the butter (replacing with applesauce). The applesauce version dries out quicker.

    When I make treats for others, I try to make things I dont like very much but I know others do. Peanut butter deserts is one of the things I am not terribly fond of. Peanut butter bars have a billion calories each and everyone loves them. Allrecipes.com has a super fatty recipe.

    Yup.

    - Take 1 whole red cabbage, remove outer leaves and core, shred.
    - Put cabbage in a large pan with a small layer of water, bring to a boil.
    - Peel, core and dice 2-3 granny smith apples and a small onion and mix it in with the cabbage.
    - Add a bit of cinnamon, put a lid on the pan and let it simmer on low heat for about 20-25 minutes.
    - Stir once in a while.
    - You can bind the liquid by adding some potato starch at the end.
    - Freezes and reheats very well.

    Edited to add that in the version I made last week a 200 g portion came out at 72 kcals.
