Pre-made Meals for Traveling - Holiday Style!

Here is your challenge if you choose to accept it....

My husband and I dont eat gluten, wheat, dairy or nightshades (eggplant, tomatoes, peppers, potatoes) and we are heading on our yearly trip around all of our families houses. This is 4 days of family packed fun. We drive and drive and drive some more and stop and chat and eat and eat some more. however, this year we have severe diet restrictions and I am determined to not eat anything I have not been eating lately because I dont want to gain weight and feel like crap again!

So, any recommendations on pre-made meals we can pack with us for traveling? and by pre-made I mean I plan on batch cooking before we leave and taking all our meals with us. we cannot expect our family to understand our restrictions let alone follow them. So, we are on our own! We will eat out a time or two I am sure since red lobster and chilis are two chains we know can cater to our needs.

    Can you eat quinoa? If you Google lemon chickpea stirfry several variations of a recipe that uses quinoa, chickpeas, vegetables, and fresh lemon juice might provide some options. I've never tried to freeze any of them, though, if that was your plan. Good luck!
