OK guys, need some inspiration here. I have no less than 2 large bags of skinless, boneless cod fillets out in my freezer. I'm useless at cooking with fish - this is quite sad as my dad used to go fishing every weekend but we always just used to have fried fish, chips and peas with no real variation. Nowadays I tend to cook the fish in the oven wrapped in foil with some herbs, do a jacket potato and have something like runner beans on the side. But this is getting boring, I want something new!!

So please guys, throw your yummy fish recipes at me!

    Top with salsa, bake until done, add a sprinkle of shredded Mexi-flavored cheese on top, let set in oven until the cheese is melted.

    Cod is lovely fish. First thing that comes to mind is to coat it with panko and bake. It tastes buttery and lovely.

    Have you looked on-line for recipes? Lately I've been trying a lot of new recipes from the Internet.

    I don't cook much fish, though. I really hate how it makes my house smell. So I have it when we eat in a restaurant.

    I love fish. I grill it or bake it and put it on top of a large salad with diced tomatoes and onions as well as herbs and a drizzle of my favorite low cal salad dressing. Add some walnuts and feta cheese! yummm!!!

    I put a little mayo on top and then some parmesan and bake it at 375F for about 20 min. It makes a nice bubbly crust.

    Tonight I am mixing 1 part sweet chili sauce with 1 part soy and glazing the fish before baking at 375 for 20 min.

    I had a fish curry last night. Simple to do. Basic curry sauce (home made) add vegetable, cook through then add chunks of fish. Serve with rice and poppadom. Lovely.

    Fish pie. Add basic white sauce, top with mash potato and bake. Serve with cauliflower and broccoli bake.

    Rick Stein has a couple of books with some lovely fish recipes in, well worth a look.
    Tarragon is a nice herb for fish.

    Having said that I love just the basic Fish, new potato, boiled with green beans and a slice of fresh bread and butter.
