Start with basic lemon jello. Substitute heated apricot juice for the hot water. Substitute the juice from a can of mandarin oranges for the cold water. (You may need to add a little cold water if the juice from the mandarin oranges is not enough. Then chill the mixture until it is semi set. While it is chilling, make little tiny balls of cream cheese, bite sized, and roll them in finely chopped walnuts. When the jello is semi set, gently stir in the mandarin oranges and the cheese balls. We always called it "Cheese Ball Jello". It's a yummy side dish or dessert.0
