I came across this awesome website this weekend and had to share it:

http://www.nomeatathlete.com/homemade-energy-bar-recipe/

You can plug in your own ingredients based on this formula and make your own protein or energy bars! I made black bean chocolate protein bars and THEY ARE SO FRIGGIN GOOOOOOD. Check it out:

Here is my ingredient list along with the nutritional breakdown. I cut it into 10 bars:
1 15 oz can of black beans - rinsed and drained
2 scoops of chocolate protein powder
4 tbsp of peanut butter
1/2 of a banana (I mashed it first)
1 tsp vanilla extract
1tbsp Agave maple syrup (again only bc it was what I had on hand)
dash of sea salt and cinnamon
-->I also added 2 tbsp coconut flour only because I like it and I had it. But it is not a requirement on the recipe
1 cup rolled oats

My recipe came out to 144 cals a bar, 10 grams of protein, 18 carbs, 4 grams of fat and 98 grams of potassium. Your nutritional breakdown will change if you use different ingredients.

*Mash the banana first, then blend in all other ingredients except for the oats in a food processor. Then toss in the oats and pulse a few more times. Smooth out the mixture into a baking dish and bake for 18-20 mins on 350.

I can't wait to make more!

Enjoy!!

  • I used PB2 instead of PB, they're in the oven now. Excited to try these as I've been making the same protein bars for over a year and needed a change. Thanks!

Wonder if you could freeze them. I don't want to have them sitting around needing to be all eaten at once or I might just do that!

Do you think I could just use cocoa powder instead of protein powder? I mean, I know it would no longer be protein bars, but would it still come out OK?

Yes! I usually end up freezing the second half of my homemade batches :)

Sure..! The website says not to use more than 50% of the "base" ingredient as cocoa - so I would maybe just do 50/50 cocoa and flour of some kind if you're not looking for protein...
