Healthy Shrimp Recipes?

Its my turn to make dinner tonight since my fiance works late, and I was wondering if anyone has any quick fixes for the small, raw frozen shrimp. We've been trying to eat healthier....trying being the key phrase, as we both need to lose weight but his weight gain doesn't bother him as much as mine. Something that would make it filling would be awesome! Usually I just make a shrimp stir fry, but I wanted to be adventurous!

Shrimp is such a low cal protein you can add something like wheat pasta or brown rice and still be good on cals. White sauce can also be made with powdered or 1% milk and stay low and healthy.0

Maybe something like a paella?0

You can make them as a topping on giant baked potatoes! I love them that way.0

I made this yesterday, from http://www.bodyrock.tv/2012/07/24/spicy-peanut-sauce-with-shrimps-2/
Here's how I made it differently than the website: I cut out the honey and salt; put my husband's over rice but ate mine over arugula and spinach; I changed the amounts of various ingredients; added broccoli for more veggies and added extra peanuts. To decrease calories further you could decrease the peanuts.
I logged:
Home - Shrimp - Kroger Frozen Cooked, Deveined 51-60 Ct., 18 SHRIMP
Kroger - Peanut Butter, Crunchy, 1 tbsp (32g)
Kroger - Unsalted Dry Roasted Peanuts, 0.25 oz.
Trader Joe's - Broccoli Florets, 1 cup 85g
Trader Joe's - Sorrento Baby Arugula Blend, 1 cups (85g)
Onions - Raw, 0.25 large
Tangerines, (mandarin oranges) - Raw, 0.5 small (2-1/4" dia)
Oil - Olive, 0.5 tablespoon
TOTAL: 379 cals
Spices I didn't log: cayenne, black pepper, garlic, ginger, basil
My instructions (easier than website): 1) saute onion, garlic and olive oil. 2) Add shrimp and broccoli and stir fry. 3) add peanut butter, peanuts and spices and heat through; add water to make it more saucy. 4) Serve with orange wedges, either over brown rice or over lettuce.
It turned out amazing!!!
We eat shrimp all the time. I often make shrimp creole, an italian-themed shrimp (with italian spice blend) or a thai-themed shrimp (soy sauce, fish sauce, basil). To make it healthier, eat whatever shrimp dish you make over lettuce/salad instead of over pasta or rice. Or you could have it with spaghetti squash, quinoa or brown rice/pasta. I hope these ideas help!0
