Sarah's Homemade Pumpkin Soup :)
So last year I decided to experiment! It was Halloween and it was my first time carving pumpkins, I didn't want to waste the insides so I learn't how to cook it and came up with this recipe, now it's something me and dad has started cooking every Halloween, Although it's nice to eat any time, especially in the Autumn to keep you all warm and it's a great comfort food/ homely dish!
So here's what you will need:
A pumpkin (any size, if some soup is left over you can still freeze it!)
2 Carrots
2 Potatoes
2 Leeks
Handful of Chives
Sprinkle of Italian Herbs
Sprinkle of Pepper
This is how to cook it:
Cut the lid off the pumpkin, cut the inside into quarters. Take each piece out of the pumpkin and scrap away the seeds and the stringy bits. Chop into small pieces and add to a pan. Get the skin off of two carrots, chop into small pieces. Then chop two leeks and two potatoes in small pieces. Add boiling water to the pan and put it on a medium heat. Whilst the soup is boiling, add some chopped chives, sprinkle a bit of pepper and Italian herbs, add to your preference.
Stir occasionally until the vegetables are soft and taste nice. The soup is mean't to take about 30 minutes but sometimes a few minutes longer is needed, cook to your preference.
