Buffalo Cauliflower "Wings"

Turned out well! I also made it with chicken for my husband.

I used Sweet Baby Ray's buffalo sauce and almond milk instead of buttermilk. Here's what MFP says for the nutrition facts, for 1/4 of the recipe with cauliflower:

Calories: 238
Carbs: 31
Fat: 11
Protein: 7
Fiber: 8

    That looks amazing, I've bookmarked and plan to try it this weekend. I also appreciate the link forward to vegan recipes. My son is vegan; he doesn't live at home so I don't experiment with vegan recipes often, but I love the chance to play around with a whole new (challenging) way of cooking. For Thanksgiving, I'm making him quinoa/pecan stuffed acorn squash. Thanks for the great recipe!

    I'm not sure if the buffalo sauce is vegan or not, you might want to read the labels of that one you get.

    Next time I might just roast the cauliflower and season it, and forego the breading. I think it's actually unnecessary since cauliflower is already crunchy.... it would also lower the calories! :)

    This looks SO GOOD!! I just got back from food shopping, and nearly got dressed again to go back so I could make this tonight. I'll probably make this tomorrow for dinner.

    Me too! Cauliflower has been my life saver—Bang Bang cauliflower, barbecue cauliflower, General Tso's cauliflower..... it works for everything :)
