Steak Bone-In

I am making 5oz New York Strip Streaks for dinner. My question is do I count the weight with the bone in or with the bone out, meaning the total weight minus the weight of the bone after I suck all the meat off of it? lol

    Bone Out. I always weigh my bone when I'm done.

    That just made me a bit happier!! LOL Thanks! DO you trim before cooking or just trim it as you eat it? I plan on grilling it.

    Trim it before, as you're not going to be eating the fat. A 5 oz. bone-in strip without the fat may actually end up being closer to 2 oz., which is pretty much nothing more than a meat nugget.
